Potato, Broccoli and Ham Soup

  • 2lbs. potatoesdiced
  • 1 oniondiced
  • 3cloves garlicminced
  • 16oz. frozen broccoli
  • 1cup hamdiced
  • 3cups chicken stock
  • 1tsp. salt
  • 1/2tsp. pepper
  • 2cups half & half[added during cooking]
  • 1cup cheddar cheese (shredded)[added during cooking]
  1. Boil the diced potatoes for 5 minutes (they still should be firm) and then cool in a bowl of ice water.
  2. Combine all ingredients (except half & half and cheddar cheese) in a ziplock bag and freeze for up to 3 months.
  3. When ready to cook, placed contents of bag into slow cooker and cook for 6 hours.
  4. During last 30 minutes of cooking, use an immersion blender or masher to puree/mash some of the potatoes and broccoli.
  5. Add half & half and cheddar cheese and cook for an additional 30 minutes.
